Studies indicate that nitrate appears to be a key active component driving some of these metabolic and tissue-protective effects, as demonstrated in a rat model of metabolic syndrome where beetroot juice and plain sodium nitrate produced comparable improvements in liver and cardiovascular markers. The body of evidence reviewed here consists primarily of animal studies and narrative reviews, with only one randomized controlled trial included — which focused on exercise recovery rather than liver health and found no significant benefit — meaning the overall evidence base for liver-specific effects in humans remains limited and preliminary. Readers should note that findings from rat and other animal models do not automatically translate to human outcomes, and further clinical research would be needed before drawing firm conclusions about beetroot's role in supporting liver health.
